Can I start cooking again on a Bertazzoni zone that is flashing H?
Yes. Bertazzoni says cooking can restart while H flashes; the letter only warns that the glass is hot.
How long does a Bertazzoni zone keep flashing H?
When that zone cools below roughly 140°F. After a long, hot cook that can take a while.
Why does my Bertazzoni show H on a zone I used only briefly?
Even a short boil heats the pan enough to warm the glass beneath it. H stays until that heat fades.
